HELIANTHUS MAXIMILIANI (Maximillion Sunflower, Prairie Sunflower)

The Maximillian or Prairie Sunflower provides vibrant yellow flowers, an animal habitat, and is edible by humans.

These iconic plants are not fussy and will grow in a variety of soil (including heavy clay) and light conditions, but prefer full sun and well-drained soils. Once established they do not need to be watered much if at all.

Note: Although considered to be deer resistant, deer will graze on these plants in their seedling phase.

This perennial can grow to 3-8’ tall making it an excellent addition to any garden’s backdrop. These are also commonly planted along fences and sheds to brighten up outdoor spaces. (If you really want to impress the neighbors, try pairing it with Blue Flax.)

In addition to its beauty, the Maximillian Sunflower has a tone of medicinal and dietary uses for both humans and animals. It is often compared to the Jerusalem Artichoke because its rhizomes can be shredded raw onto salads or roasted with other root vegetables. However, its seeds are even tastier and can be enjoyed as an oil, salad topping, or snack. That is if you beat the birds to them.

Fun Fact: These sunflowers were named for the naturalist Prince Maximilian of Germany, who led an expedition into the American West in the 1830s.
